Slow Cooker Cajun Chicken

 Autumn is finally in its peak, and that means more delicious and easy Crock Pot soups and dinners! They're so easy to put together; you put everything in and forget about it for a few hours, and voila! You have an amazingly easy dinner that everyone will rave over.

Here I'm making spicy Cajun style chicken to put over rice. It's superbly flavorful. 


You wanna start out with a Slow Cooker and some slow cooker liners. You really need these! It's worth not cleaning up the ridiculous mess afterwards, am I right?



Grab a helper to assist in the preparation!

You're gonna need:



A pound of whole boneless chicken breast or tenders.



Just lay them on the bottom of the crockpot with the most visible surface area possible


A couple tablespoons of Cajun seasoning. If you don't like spicy things, go a little easier on it! This stuff has amazing flavor though. There are pre made varieties at the store, or you could make it yourself!


So just sprinkle your desired amount over top the chicken! Also, add salt and pepper to taste.


Next add an onion, garlic, mushrooms, celery, and peppers (we used jalapeños, but you can use whichever kind you want), all chopped and diced to desired thickness.


And lastly, a can of diced tomatoes, no Italian seasonings required. It was the only thing I had in my cabinet at the time! I didn't even notice the difference through the Cajun seasoning anyway.


Mix everything all up!


Place the lid on the crock pot so that it covers the opening snugly.


Let all these ingredients cook for 5 hours on high heat or 10 hours on low heat, depending on how soon you need dinner to be ready!


When it's done it'll look something like this! All the flavors permeated nicely and our apartment smelled delicious!

 We were so hungry that I forgot to take a picture of the final product, but just pour a ladle-full over a bed of rice and you'll be good to go!

Spicy Cajun Slow Cooker Chicken
(Serves 4)

Ingredients:

1 pound boneless chicken breasts or tenders
1 onion, chopped
2 cloves of garlic, diced 
1 stalk of celery, chopped
6-8 oz. fresh white mushrooms
1 pepper of choice, chopped
1-3 Tablespoons Cajun seasoning
salt to taste
pepper to taste

1. Place chicken in the bottom of crock pot.
2. Season chicken with salt, pepper, and cajun seasoning.
3. Mix in all other ingredients.
4. Cook on high for 5-6 hours, or low for 10-11 hours.
5. Stir together and serve over rice.
6. Top with cheese, green onions, sour cream, or other optional garnish.
